Apparently you are assigning the email modules automatically. Unfortunately you are not inserting a required email address at the same time. So if you try to assign a new fulfillment module before you manually configure the email modules, you get an error that the from and to email addresses are missing. If you are automatically assigning a module you need to automatically fill in required fields.
