How important is it for the category code to match the URI? Right now our site defaults category URIs to /catcode.html. We'd like to get a little creative with the category URIs and switch them to something like /category-name.html while 301ing the old ones. Will we run into problems? Does the URI have to match the catcode?

absolutely no connection. Even if you choose auto generation, by default, it uses the category/product name as the basis for the url. you can easily override that with your own via direct editing of the category or product or via importBruce Golub

I believe, in general, its benificial for SEO esp. at the product level. For categories, I assume you could get away with /category-name/Bruce Golub
