Hiding the Inventory Variants for specific products

Store owner requested that overall Inventory setting for Hide Out of Stock Products be unchecked so that a size will still display but cannot be added to the cart. Now they would like to use the Hide Out of Stock Products for specific products. When I try to check this box for the product, it unchecks itself during the click "update" process. I'm thinking maybe this isn't the right combination of boxes checked or can this not be done on a product by product basis?
