So the product display item cannot be edited until a third-party component
    is installed that gives access?

Not correct. That is not a 3rd party component. It comes with MM5.
    Take a look at <A HREF ="http://www.emporiumplus.com/i5/prod.jpg That is a screen">http://www.emporiumplus.com/i5/prod.jpg That is a screen</A>
shot showing the editing of the product display item. When you are in
the 'prod' page template you will see those tabs at the top. When you
click the product display layout, you will either see the "advanced
mode" (like you see here) or you will sse the "point + click mode" which
lists which fields will display on the PROD screen. Switching the mode
is a link just below that large input box.

You will find the advance mode on other screens too. Getting used to
the new tools and a couple gotchas takes less a day or two. But once
you have done that, you will find this software to be extrememly easy to
use and full of all sorts of neat things.

FWIW: I made those install docs (like the minibasket you used last
night) so detailed that after installing a couple modules, you will have
a pretty good feel for how all of this comes together. As example, if
you had been installing the coupon module, the token on the 'prod' page
template requires you open the product display layout in advanced mode.
        <A HREF =/"http://www.emporiumplus.com/v5/coupon.htm (para "Editing Requirements")/">http://www.emporiumplus.com/v5/coupon.htm (para "Editing Requirements")</A>.

Use the product display layout tab within the PROD screen area.

Here is the demo I put together at the end of our beta period to exercise
what I had learned. A little gag on my Hatfield roots.

          http://tinyurl.com/cpx74

I did a quick writeup on it on the content pages too.

Let me clarify. Bill's tip gave me the info I needed to modify the product
layout somewhat. Still waiting for docs of some kind on conditionals, etc.
              Viking, where are you?
