The limit refers to how many pointers to files are stored in memory on a NIX based server. Anything more requires an additional directory read (very low tech explanation), however, this is not likely to cause a significant descrease in speed. The number one culpret is the amount of processing bandwidth available to the engine that creates the Merchant pages. If you are sharing that bandwidth with 30, 50, 100 sites or more, then you have less. A top level host usually limits the # of sites to 30. In addition, they run better hardware (usually two to three times or more powerful than large server farms) AND they know how to setup Merchant to be more efficiant.
(As an example, one major server farm still runs Merchant stores on 1.2 Mhz machines, with slow 5,200 RPM drives and probably less than 1 GB of RAM. Compare this two the typical top level host who is running 3.2+ Dual Xeon/10K RPM drives and 2 to 4 GB RAM.)
