Doesn't appear there are any XML Tags for specifically submitting a sitemap that TELLS Google that these URLs are now 301s.

Sitemap.org doesn't seem to have it. There isn't even a prototype to specify an image for the products, and I know there is a prototype for that. Since an image tag isn't there, I was wondering if there were other useful tags that aren't listed there, like for 301s as I've described, to instruct the SE to follow these rules?

So, I'm anticipating simply relying on 301s in URI Management to map to the new canonical.

Yup.

Site maps are to tell google what URLs ARE to be indexed. Adding 301 redirects to the Old urls should be all that's needed.
