Instead of removing the button, try setting its CSS to "display: none;".

We have a handful of products that we show as only available for in-store purchase in our brick & mortar store for our local customers. We removed the add to cart form on a alternate display page we use for these items. This works fine for products without attributes in regards to showing current inventory. However, products with attributes (inventory variants) we lose the inventory message for the attributes which indicates whether the products variant is in stock or not. I assume this is tied in to the form that contains the add to cart function. Any suggestions on how to deal with this issue would be appreciated.
