Back in Stock Notification for Just One Product

The owner is asking if we can set up a notification to be sent for when a product is back in stock. Just for this one particular item.
Is there a simple way to do this? Another option may be just to set up a wishlist so customers can add it and then we contact them when back in stock?
It's for an item we would need to get at least 1000+ customers wanting it before we do another production run.
Any ideas?

Miva has a wait-list module that's available free from them. A little template code should be sufficient to limit it to a single product.
