International (Non English) Miva Site - Checkout Options in English

I operate a few Miva 5.5 sites in France and Spain. I am trying to replace the "Select One" text that shows by default on the checkout pages for the Country selection box, for both Bill To and Ship To. Does anyone know if there is a configuration setting for this in the admin somewhere?

I need to show the translated version of "Select One" as this English text is starting to piss off my French and Spanish customers.

Unfortunately the select one text for the country drop down it not editable via the template code or admin. It can be hard coded but that has some other problems. The easiest way to modify that text would be to use some JavaScript to target that element and modify the select one text to the appropriate language.
