Am I correct in finding that the search is now searching all of the custom product fields?

This is not something that was added in 5.5.
Perhaps one of your 80 modules is searching through the custom fields? :) -

You are right. I had the power search item enabled on the srch page even though I had not added the tokens. When I unassigned it, the search went back to normal.
