The create shipping and enter tracking are greyed out. How do you turn on those buttons?

You have to select something to ship. Either the whole order (if you're on the initial screen) or specific items within the order if you want multiple shipments or are inside the order itself.
Once you create a shipment you can print a picklist, enter tracking info and shipping cost info.

I was looking at the checkbox with the delete button above it and my mind was saying "don't do that". :-) Ok. I got past that hurdle. I picked the product and entered a tracking number. I did not see where I could change the status. It said processing. So I clicked on manage shipments. I checked the box and clicked picklist. That gave some info but nothing to change the status. I clicked the enter tracking number again and it was still there but still no way to say shipped. So the status is picking.
In merchant.mvc I can go to the ORDH screen and see it is processing. It does not say shipped. Also, there is no link to fedex to click to see the tracking info. I'm missing something.Bill Weiland - Emporium Plus http://www.emporiumplus.com/store.mvc

Philosophically you don't "edit" the status, you complete or do an action and it updates appropriately.
The states are:
Pending - Initial Order
Processing - Shipment Created, a Picklist is now printable
Shipped - A shipment above has now been marked as shipped and may also have a tracking number with link for tracking
RMA Issued - You mark a shipment as needing to be returned, an RMA is "issued" and the system assigns it an RMA number
Returned - An RMA was received and you mark it as Returned.

I have not worked on the beta version at all, so this question my be due to my not actually seeing how it flows. (I have been reading posts).
You say that "Processing = Shipment created, picklist now available".
In store we operate, a shipment is not actually created until after a picklist is done and all items in an order are available (some maybe drop shipped, some no longer available, etc etc). In any case, we do a picklist first, then mark orders as shipable.
Does your method indicate a complete shipment?
Can a picklist be generated first from selected recieved orders?

Our company operates the same way. We would need to print the "picklist" page first as mentioned below (in our case we used EZBatch in the past). It seems like an extra step now to have to create a shipment and then select the orders for the picklist. Looking forward to a tutorial on how this new arrangement all works. Especially variables available for customizing the picklist page.

The video tutorials are an essential in learning the new steps here for added features. The one demo-ing the order/ship portion is especially useful.
I'd still like to see written features documentation to read cover-to-cover, but I'm diving into this from enthusiasm so I'm sure I'll miss things until I catch up.

A few things:
1. New Merchant Tutorial videos will be posted today but GarciaP is correct, there's a sticky thread in the main 5.5 forum (it should show up on top) with roughly 8 or 9 of the videos that already exist.
2. There's a new book from Pamela coming imminently that covers PR7 cover to cover for those who like that approach
3. We'll be doing some webinars starting tomorrow that cover using the new features, look for the announcement shortly.
