On a Mac, Command-A should select all countries displayed. I have seen situations where if you have hit update or performed an action, it is necessary to refocus by selecting the first item before using a keyboard command, but it should work. After using Command-A, if you hold down the Command key you can deselect individual countries.

Have you used the select all? There is a keyboard shortcut ctrl + a will select all records in a list, and then you can hold control and click records you want to deselect.
We've actually heard really positive feedback from people workflows improving with Version 9. A lot of it has to do with getting used to the new UI and how to take advantage of the new features.
