Does anyone have any idea what has caused StoneEdge to be unable to create new batches after our sites data files were moved to the new "database server" Order manager can still re-import old batches but is unable to create and import new orders for any migrated site.

Any particular errors? Only the core software should have any knowledge of where its database lives, whether on the local server or a remote server, and that's contained exclusively in the connection info not known to any higher level code. Most modules should be using API functions, not even talking to the database directly, so a further reason it should not have affected things.
