How do I create a mail order in Order Processing?

How do I create a mail order in Order Processing? Payment was a check.

Never mind that question, I figured out that I needed to add a Check Payment module. But I don't wish to display "Check" that appears in the Pay With drop-down list during checkout. Is there an option to hide it?

Never mind, I assigned Payment Method to hidden Availability Group.
