I am trying to export a custom Product field by mapping the product token "%custom:brand%" to the Header field "%brand%" and it isn't working. Is the %custom:brand% a correct token? Thanks for any help.

The "brand" in the header is not a token. It is plain text, hence, just brand. The only % characters in the header are the delimiter tokens, which are %^%.Bill Weiland - Emporium Plus http://www.emporiumplus.com/store.mvc

I removed the ^% symbols so the header reads as follows and I still get "custom:brand" instead of the actual brand typed in the field:
^%id%^%expiration_date%brand^%condition%^%product_ type%^%mpn
results look like:FLAG-POLE-160AP6 2011-06-30 custom:brand new Flags & Banners 160AP6

I don't know where you got that example but it is not close. If this is the header, the only thing that goes there is the names of each column SEPARATED with the %^% delimiter token.
id%^%expiration_date%^%brand%^%condition%^%product _ type%^%mpn
The above is the header.
The header is VERY MUCH different from the product section. The product section is made up of field tokens. Each field token is SEPARATED with the delimiter token (%^%). Thus in the product section you see %custom:brand% which is a field token. That is how I had it originally and had the same results.
This is how the product fields are listed, maybe that is where the problem is:
%product:price%%^%%product:code%%^%%year:30%-%month:30%-%day:30%%^%custom:brand%^%new%^%%category:name%%^% %product:sku%

You are missing the % around each end of the "custom:brand". All you have is the text custom:brand with the delimiter token before and after it. It should look like %^%%custom:brand%%^%Bill Weiland - Emporium Plus http://www.emporiumplus.com/store.mvc
